Instructions
- Pat skin dry with paper towel (the drier the skin, the easier it is to crisp)
- Drizzle with olive oil
- Season with salt & pepper
- Heat pan on medium.
- Once pan is hot, cook fish for 7 minutes skin side down…
- Turn and cook for 5 minutes skin side up
- Rest for 2 minutes before serving
