Pan fried Humpty Doo Barramundi

Pan fried Barramundi is easy with this straight forward, no fuss recipe.

EASY

Ingredients 

1 x plate-size Humpty Doo Barramundi, approx 400gm
Olive oil
¼ cup chopped dill
1 tsp Lemon zest
Salt and pepper to taste

Instructions

  1. Heat pan to medium heat
  2. Mix dill, lemon zest, salt and pepper. Set aside.
  3. Place diagonal cuts in the flesh of the Barramundi, both sides.
  4. Drizzle with olive oil, rub well into the skin and cavity.
  5. Rub the dill mix into skin and cavity.
  6. Heat frying pan to medium heat and cook 5—6 mins both sides.

Serve with steamed greens, salad or roast vegetables.

Cook's note

Gently lift side fins to check it is cooked through.
If more cooking time required, place Barra in an oven pre heated to 180C for approx 5 mins before serving.
