BBQ Humpty Doo Barramundi Skewers with Salsa Verde Recipe

Ingredients
800g Humpty Doo Barramundi fillets (skin on)
Sea salt flakes
Cracked pepper
Salsa Verde
¾ cup Extra Virgin olive oil
4 tablespoons chardonnay vinegar
1 bunch leaf parsley
1 bunch basil
3 cloves of garlic chopped
1/3 cup rinsed baby capers
Zest of 1 lemon
3 long red chillies, seeds removed and finely chopped
Sea salt flakes
Instructions
- Cut the fish into approximately 1-inch cubes and thread onto skewers
- Preheat BBQ, allow about 30 minutes to prepare the coals for cooking over
- Sprinkle the barramundi skewers with sea salt flakes and cracked pepper on all side.
- Cook the skewers over BBQ, rotating every few minutes till golden and the skin has crisped
- Once cooked, serve immediately with Salsa Verde
Salsa Verde
Mortar & Pestle:
- Place the garlic and a pinch of salt in a mortar and crush to a paste
- Add the capers and continue pounding until well combined
- Add the parsley and basil, crushing to a pulp
- Stir in the olive oil and vinegar
- Finish by mixing in the orange zest and chopped chilli
- Taste and adjust with more salt if needed Method
Food Processor:
- Place the oil, vinegar, parsley, basil, garlic and capers into a food processor
- Blend until finely chopped
- Transfer the salsa to a small bowl
- Stir in the orange zest and chopped chili
- Taste and adjust with more salt if needed
