BBQ Humpty Doo Barramundi Skewers with Salsa Verde Recipe

EASY

Ingredients 

800g Humpty Doo Barramundi fillets (skin on)

Sea salt flakes

Cracked pepper


Salsa Verde

 ¾ cup Extra Virgin olive oil

4 tablespoons chardonnay vinegar

1 bunch leaf parsley

1 bunch basil

3 cloves of garlic chopped

1/3 cup rinsed baby capers

Zest of 1 lemon

3 long red chillies, seeds removed and finely chopped

Sea salt flakes

Instructions

  1. Cut the fish into approximately 1-inch cubes and thread onto skewers
  2. Preheat BBQ, allow about 30 minutes to prepare the coals for cooking over
  3. Sprinkle the barramundi skewers with sea salt flakes and cracked pepper on all side.
  4. Cook the skewers over BBQ, rotating every few minutes till golden and the skin has crisped
  5. Once cooked, serve immediately with Salsa Verde 


Salsa Verde


Mortar & Pestle:

  1. Place the garlic and a pinch of salt in a mortar and crush to a paste
  2. Add the capers and continue pounding until well combined
  3. Add the parsley and basil, crushing to a pulp
  4. Stir in the olive oil and vinegar
  5. Finish by mixing in the orange zest and chopped chilli
  6. Taste and adjust with more salt if needed Method


Food Processor:

  1. Place the oil, vinegar, parsley, basil, garlic and capers into a food processor
  2. Blend until finely chopped
  3. Transfer the salsa to a small bowl
  4. Stir in the orange zest and chopped chili
  5. Taste and adjust with more salt if needed
