Pan fried baby Barramundi is easy with this straight forward, no fuss recipe.

1 x baby Humpty Doo Barramundi, approx 400gm

Olive oil

ΒΌ cup chopped dill

1 tsp Lemon zest

Salt and pepper to taste

  1. Heat pan to medium heat
  2. Mix dill, lemon zest, salt and pepper. Set aside.
  3. Place diagonal cuts in the flesh of the Barramundi, both sides.
  4. Drizzle with olive oil, rub well into the skin and cavity.
  5. Rub the dill mix into skin and cavity.
  6. Heat frying pan to medium heat and cook 5β€”6 mins both sides.


Cook's note: 

Gently lift side fins to check it is cooked through.
If more cooking time required, place Barra in an oven pre heated to 180C for approx 5 mins before serving.
