Oven baked Humpty Doo Barramundi

ingredients and instructions

400 gm whole baby Humpty Doo Barramundi

1 potato

2 carrots

1 onion

1 head of broccoli, cut into pieces

½ cup frozen peas

½ red capsicum, cubed

Salt and pepper to taste

Olive oil, butter

Fresh lemon to serve


Preheat oven to around 190C

  1. Chop potato, carrot and onion. Season with salt and pepper
  2. Heat a splash of olive oil in a pan with lid and braise for about 10 mins ??
  3. Cut 3-4 slits in the flesh of the Barramundi
  4. Rub with olive oil and season with salt and pepper.
  5. Place Barramundi, potato, carrot and onion in an oven proof dish with lid. (Hint: prop fish up with an oven-proof ramekin for even cooking)
  6. Heat knob of butter in the pan. Saute broccoli, peas and capsicum for 5 minutes.
  7. When Barramundi is starting to flake, remove from oven and rest for approximately 2 minutes.
  8. Serve with vegetables
