ingredients and instructions
Ingredients: 

4 x 180 gm portions of HDB, skin on

2/3 cup Australian extra virgin olive oil

2 bunches of broccoli, trimmed into small florettes

1 punnet cherry tomatoes, leave whole

2 yellow capsicums, cut into medium squares

2 carrots, thinly sliced

2 zucchinis, sliced 1 cm thick

2 garlic cloves, thinly sliced

Instructions: 
  1. Preheat oven to 210C (200C fan forced)
  2. Line a baking tray with baking paper.
  3. Cut vegetables and place on a prepared tray.
  4. Drizzle with 1 tablespoon of oil, season with salt and pepper and toss to coat. Bake for 12 minutes.
  5. Pre-heat a frying pan to medium heat
  6. Sprinkle fillets with salt and pepper, drizzle with olive oil and rub into both sides of the fish.
  7. Place Barra in pre-heated pan, skin side down, for 6 minutes.
  8. Turn the pieces over, skin side up. Cook for 7 minutes.
  9. Remove from heat and rest for 2 minutes.
  10. Serve with the roasted vegetables.
